Get ready to indulge, because this macaroni and cheese recipe does not try to be something it’s not! I’m talking butter, heavy cream, lots of cheese, and, bacon! (why not?) As if that weren’t enough, it’s then topped with Italian breadcrumbs and broiled until perfectly crisp. This macaroni and cheese recipe truly is something special. 


Creamy Macaroni and Cheese

Creamy Havarti and Colby jack are the perfect pair of cheeses for an ultra-rich, creamy sauce. Buy them in block form and shred at home. Pre-shredded cheeses have a coating that makes them not melt as nicely. Havarti is very creamy, making it slightly difficult to shred. Just do your best, a few big chunks are okay.

Ingredients for Macaroni and Cheese:

  • Elbow macaroni
  • Flour
  • Butter
  • Heavy cream
  • Diced jalepeños
  • Chopped bacon
  • Creamy Havarti
  • Colby jack
  • Sour cream
  • Italian breadcrumbs

Make macaroni and cheese: 

  1. Start by cooking the pasta. Adding the sauce ingredients to the cooked pasta is much easier than making the sauce separately.
  2. While the pasta cooks, add the bacon to a saucepan and sauteé until crispy and cooked through. Remove from the pan and chop into bite-sized pieces. 
  3. Using the leftover bacon grease, sauteé the diced jalepeños for about 5 minutes until soft.
  4. Return the chopped bacon to the pan and add 1 tbsp butter.
  5. Once the butter has melted, add 2 tbsps. of flour and whisk until combined.
  6. When the pasta is done cooking, drain and add it to the pan.
  7. Whisk in the heavy cream, shredded cheeses, and sour cream. Continue to whisk until cheese is melty and all the ingredients are combined.
  8. Turn heat to low and allow to simmer and thicken, about 15 minutes. Continue to stir occasionally.
  9. Add macaroni contents to an oven-safe baking dish and set your oven to broil.
  10. Sprinkle the Italian bread crumbs on top of the macaroni and cheese.
  11. Broil until crisp and golden, about 5 minutes. Keep an eye on it to make sure it doesn’t burn.
