Pizza Dough Recipe

This pizza dough recipe produces a crust that is so unbelievably soft and chewy. Ditch the store-bought crusts and make this pizza dough with just a few simple ingredients.

This is my favorite pizza dough recipe because the crust is so soft and chewy. Pizza for dinner is always a huge hit, and making it from scratch is so much more fun than ordering delivery! This recipe could not be easier- 7 simple ingredients, 1 bowl, and 1 hour to rise.

What type of flour is best?

Pizza dough that is made with bread flour produces a softer, more chewy crust than those made with all-purpose. This is because bread flour has a higher gluten content, which allows it to stretch and rise more. The result is an extra soft and fluffy crust!

Other Ingredients:

  • Active dry yeast: Yeast is a live culture that activates when combined with warm water. It gives the dough texture and causes it to rise. It also makes the dough more pliable and easy to work with.
  • Warm water: Water ties all the ingredients together and activates the yeast. It acts as the binder and makes the crust firm. It should be luke warm, not hot. Hot water will kill the yeast. 
  • Sugar: Sugar is food for the yeast. When mixed with warm water it consumes the sugar causing it to ferment. Sugar is also vital in pizza dough because it helps the crust get crisp and keeps more moisture inside the dough.
  • Oil: Olive oil adds moisture and makes the dough easier to work with.
  • Salt and garlic: The perfect combination of seasoning for pizza dough.
  • Cornmeal: For dusting, adds flavor and makes the crust extra crispy.

How to Make the Best Pizza Dough:

  1. In the bowl of a stand mixer fitted with a dough hook attachment, add the yeast, warm water, olive oil and sugar. Let it sit for 10 minutes to activate the yeast.
  2. Add the salt, garlic, and bread flour and knead on medium-high speed until well combined and the dough is coming off the sides. It should spring back when gently pressed in. 
  3. Shape the dough into a ball and transfer to a bowl coated with olive oil, or leave it in the stand mixer bowl. If you don’t have a stand mixer you can knead the dough with your hands. It will be sticky but just keep kneading it and it will get easier to manage.  
  4. Cover the bowl with a damp kitchen towel and plastic wrap. Set the dough on the counter to rise for 1 hour or until doubled in size. 
  5. While the dough rises prepare your pizza toppings and preheat the oven to 450°. Spray a baking or pizza pan with nonstick spray and lightly dust with the cornmeal.
  6. Punch the dough down and cut into 2 equal halves. 
  7. Set on a clean surface coated with olive oil, roll the dough out into two 8″ circles. 
  8. Top with pizza sauce, shredded mozzarella and cheese, and any additional toppings. 
  9. Place pizza on top of the dusted cornmeal and bake for 12-15 minutes, until crust is golden brown.

To Make Ahead of Time: 

Make pizza dough ahead of time and store in the fridge for 3 days. Allow to rest at room temperature for 10 minutes after removing from the fridge. Pizza dough also freezes well for up to 1 month.

Ingredients

  • 2 and ¼ tsp. active dry yeast (1 standard packet)
  • 1 cup warm water
  • 1 tbsp. olive oil
  • 1 tsp. sugar
  • ½ tsp. salt
  • 1 tsp. garlic powder
  • cups bread flour
  • cornmeal for dusting

Instructions

  • In the bowl of a stand mixer fitted with a dough hook attachment add the yeast, warm water, olive oil, and sugar and whisk to combine. Let it sit for 10 minutes to activate the yeast, it should dissolve and be slightly foamy.
  • Add the salt, garlic powder, and bread flour.
  • Knead the dough on medium-high speed for 5 minutes until the dough comes together and is coming off the sides.
  • Shape the dough into a ball and coat the bowl with oil. Cover with a damp kitchen towel and plastic wrap. Set on the counter to rise until doubled in size. About 1 hour.
  • While the dough rises prepare your pizza toppings and preheat the oven to 450°. Spray a baking or pizza pan with nonstick spray and lightly dust with the cornmeal.

Notes

Make the crust ahead of time:
Pizza dough can be made ahead of time and kept in the freezer for 3 months or in the fridge for 2 weeks.
